AMAZING Gluten Free Vegan Banana Bread

Ingredients:

- 1 1/2 cups oatmeal ground until fine
- 3/4 cup almond flour
- 1/2 cup coconut sugar
- 1 1/2 teaspoon baking soda
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp salt
- 2 flax eggs (mix 2 TBSP flax meal with 4 TBSP water and let stand for 30 minutes until egg consistency)
- 1/2 cup avocado oil mixed with 1 ounce water
- 2 medjool dates
- 2 ripe bananas
- 1 cup chopped walnuts

Instructions:

1. Preheat oven to 350 degrees F
2. Mix blended oatmeal, almond flour, coconut sugar, baking soda, salt, cinnamon, and nutmeg in a large bowl
3. Blend flax egg, dates, oil and water together
4. Combine wet and dry ingredients and mix with a hand blender until well blended
5. Fold in walnuts
6. Grease a loaf pan with vegan butter and bake for 35 minutes!
